One of  the most popular foods for Halloween, Thanksgiving and Christmas is the Pumpkin.  You can learn to make great Pumpkin recipes. And we will explore that below. Another idea is to have your kids decorate them for inside or outside of your home and that really brings in the holliday spirit. Did you know Pumpkins are a actually a fruit and not a vegetable?  Pumpkins can range from up to 1000 pounds and is similar to a squash.  The pumpkin originates from The Cucurbitacea family and include other fruits such as gourds, melons, squash, cucumbers, and watermelon.

Nutritional benefits of the pumpkin, is it's low in saturated fats, cholesterol, and sodium.  Alpha, Lutein and Beta Carotene are it main nutrients. They are a great source of Vitamin A, B, C, E, B6, potasium, iron, magnesium and Pantothenic acid. It has numerous health benefits and an excellent source of Omega 3 and 6 fatty acids.

Pumpkin recipes are numerous and can be made from fresh or canned pumpkin. Some wonderful recipes can include the pulp and roast the seeds as a snack or on salads.  It's usually in fall and early winter when fresh pumpkins are in season. All sorts of recipes can be made for pies, breads, soups, muffins, pancakes, pudding, smoothies -The list is endless! My absolute favorite is the Pumpkin Pie, My family can't have enough of those during the holidays including Christmas! Just look at that picture.

The Dough:

1  1/4 cups all-purpose flour, plus more for dusting

2 tablespoons granulated sugar

1/2 teaspoon salt

2 tablespoons vegetable shortening

4 tablespoons cold unsalted butter, cut into 1/2-inch pieces

2 tablespoons beaten egg (about 1/2 large egg)



The Filling:

2 cups of fresh puree or/ one- 15-ounce can pure pumpkin

3/4 cup packed dark brown sugar

3 large eggs

1 cup half-and-half

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground allspice

1/8 teaspoon ground cloves

Whipped cream, for serving or your favorite vanilla ice cream.

The best way to cook it is to bake it when using fresh pumpkin. You cut the Pumpkin into quarters or halves depending on the size and scoop out the seeds. Fill the roasting pan with half a cup of water and add the pumpkin pieces. Bake or roast at 400 degrees for 30 minutes.(for pumpkin of medium size) be certain its really tender. Once it's cool enough to handle, extract the pulp with a spoon and put it in a blender or food processor to make sure all the stringy bits are gone. This will give you 2 cups of puree, season, and use it to make your favorite dishes.
